In a large bowl add yeast, sugar, and water then stir until combined. Let stand for 5 to 10 minutes.
Mix in 1 cup of the flour and salt. Adding in couple of tablespoons of flour at a time to the dough until thick and shaggy. Rest for 20 minutes.
Knead until the dough is smooth for about 5-8 minutes. Place into the clean oiled bowl. Cover the bowl and let it rise for 1 1/2-2 hours.
Deflate the dough and rise again for 1 hour.
Place the dough on a lightly flour surface and divide into 12 equal portions. Transfer to a lined baking sheet.
Cover and rise until the dough rises for 40 minutes.
Preheat the oven to 400F.
Remove cover. Brush on egg-wash or cooled melted butter. Slash each roll. Bake for 20 minutes.
Once golden brown, remove onto a cooling rack. Brush on melted bread.
