Spelt Apple Cake

  • 125 grams plain yogurt
  • 225 grams Arrowhead Mills Organic Spelt Flour
  • 150 grams coconut sugar substitute for sugar of choice
  • 75 grams olive oil
  • 3 large eggs
  • 8 grams baking powder
  • 1 tablespoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ½ teaspoon fine kosher salt
  • 3 medium apples diced


  • Preheat oven to 350°F.
  • Butter the cake mold and sprinkle it with sugar.
  • Mix yogurt, eggs, sugar, olive oil, and vanilla until well combined.
  • In a separate bowl, mix together flour, salt, and baking powder.
  • Combine dry mixture to wet and stir until just combined.
  • Fold in apples and pour the mixture into the mold.
  • Bake for 50-60 minutes. To check doneness, insert a toothpick into the center of your cake. The toothpick should come out clean.
  • Allow the cake to cool for 10 minutes before removing it from the mold.
