Gluten Free Banana Bread

- Ingredients:
- 1 Cup Arrowhead Mills White Rice Flour
- 1 Cup brown rice flour
- ¼ Cup potato starch flour
- ¼ Cup tapioca flour
- 1 teaspoon xanthan gum
- 1 Tablespoon baking powder
- 1 Tablespoon of egg replacer (dry option)
- ½ Cup of canola oil
- ²⁄3 Cup honey or brown sugar
- 1½ Cups mashed over ripe bananas

- Directions:
- Pre-heat oven to 350°F.
- Grease a standard loaf pan.
- Blend bananas with sugar and oil, stir in dry ingredients. Blend well until all ingredients are moist.
- Transfer batter into prepared loaf pan and bake for 40 minutes or until test skewer comes out clean.
- Cool on rack before slicing.
