Peanut Butter Mocha Swirl Banana Bread

  • 3 large ripe bananas smashed
  • ¾ cup coconut sugar may substitue brown sugar
  • ½ cup creamy peanut butter⁠
  • cup butter⁠ melted
  • ½ cup milk
  • 2 large eggs
  • 2 teaspoons vanilla extract⁠
  • 1 ½ cups Arrowhead Mills Organic Spelt Flour
  • 1 teaspoon baking soda⁠
  • 1 teaspoon baking powder⁠
  • ¼ teaspoon salt⁠
  • ½ cup chocolate chips melted
  • 2 tablespoons brewed espresso⁠


  • Preheat the oven to 350°F and grease a loaf pan.⁠
  • In a large bowl, beat bananas, sugar, peanut butter, butter, milk, eggs, and vanilla until smooth. Fold in the Organic Spelt Flour, baking powder, baking soda, and salt until batter is just combined.⁠
  • Reserve ½ cup of batter and place in a medium bowl. Scrape remaining batter into prepared pan and set aside.⁠
  • Whisk melted chocolate and espresso into reserved batter until smooth. Place chocolate mixture by the tablespoon on top of batter in a loaf pan. Use a knife or toothpick to gently swirl the two batters.⁠
  • Bake mocha banana bread for 50-55 minutes or until a toothpick inserted in middle comes out clean. ⁠
  • Allow the mocha banana bread to cool in the pan, then remove it and let it cool completely on a wire rack. Slice and enjoy!⁠
