In the bowl place Arrowhead Mills Organic Gluten Free All-Purpose Flour, xanthan gum, yeast, sugar, and whisk together. Add the salt, and whisk again to combine well.
Add the water and olive oil, and mix on medium speed in stand mixer or pulse in food processor until the dough begins to come together.
Turn the mixer to high speed or food processor on and process until the dough is no longer a ball but has begun to appear whipped.
Transfer the dough to an oiled container with a tight-fitting lid or a greased bowl, spray lightly with cooking oil spray, and cover tightly.
Place in a warm area to rise for one hour.
Lightly grease a 9”×9” pan and make your filling by combining all filling ingredients. It should be spreadable but not melted.
Roll the dough out and cut into 9 pieces. Then roll the dough one at a time into a long oval 8” long. Spread some of the filling on top then cut slits lengthwise but not all the way. Then grab both ends and twist. Form it into a knot. Place into the pan and repeat.
Cover and let rise for 30mins or until puffy. Preheat oven to 350F Lightly brush with an egg wash or melted butter before baking. Bake for 25-30mins or until the top is golden.
Brush with melted butter or leftover oil from roasted garlic.
