Ingredients

  • 2 cups Arrowhead Mills Organic Red Lentils rinsed and drained
  • 1 teaspoon turmeric
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 tablespoon ginger minced
  • 1 large onion diced
  • 1 tablespoon avocado oil substitute with vegetable oil
  • 3 cloves garlic minced
  • 1 pinch red pepper flakes optional
  • 2 ⅝ cups vegetable stock
  • 8 ounces full fat coconut milk
  • 1 leaf bay leaf

To Serve

  • spinach optional garnish
  • chutney optional garnish
  • toasted cashew optional garnish

Instructions

  • In a saucepan, saute vegetable oil with onion, garlic, and spices for a few minutes until the onions are translucent.
  • Transfer mixture to the slow cooker with rinsed and drained lentils, coconut milk, vegetable stock, and bay leaf.
  • Cook on low for 6 hours or until the lentils have reached desired consistency.
