Instructions
In a saucepan, saute vegetable oil with onion, garlic, and spices for a few minutes until the onions are translucent.
Transfer mixture to the slow cooker with rinsed and drained lentils, coconut milk, vegetable stock, and bay leaf.
Cook on low for 6 hours or until the lentils have reached desired consistency.
