Spelt Four Cookies

  • 1 ¾ cups Arrowhead Mills Spelt Flour 
  • ½ cup butter, softened
  • ¾ cup sugar
  • 1 Flaxseed egg (1 tbsp Arrowhead Flaxseed ground & 3 tbsp water)
  • ½ tsp vanilla extract 
  • ½ tsp baking powder 
  • ½ tsp sea salt
  • ½ cup organic chocolate chips 


  • In a small bowl mix together 1 tbsp ground flaxseed and 3 tbsp of water. Set aside to allow it to thicken.
  • Preheat the oven to 350°F. In a large mixing bowl beat butter with sugar, flaxseed egg and vanilla extract.  
  • Blend in flour, baking powder and salt. Stir well. Fold in chocolate chips.  
  • Drop on oiled baking sheet by teaspoonfuls, add more chips if needed. 
  • Bake for 10-12 minutes, or until done. Tip sprinkle with sea salt!
