Creamed Corn

      • Ingredients:
        • 5 ½ cups / 24 ounces Organic Frozen Sweet Corn⁠
        • 2 cups / 473 milliliters Half & Half⁠
        • ½ cup / 30 grams Grated Pecorino Romano (divided)⁠
        • 2 tablespoons / 28 grams Unsalted Butter⁠
        • 2 tablespoons / 24 grams Arrowhead Mills Gluten Free Brown Rice Flour⁠
        • 2 teaspoons / 4 grams Smoked Paprika (divided)⁠
        • 1.5 teaspoons / 5 grams Fine Kosher Salt⁠
        • ½ teaspoons / 2 grams Freshly Ground Black Pepper⁠

        For best result, ingredients should be weighed

      • Directions:
        1. In a cast-iron skillet, melt butter on medium heat. Once melted, add Brown Rice Flour while constantly stirring until flour becomes cooked (about 30 seconds). ⁠
        2. Slowly add Half & Half while stirring constantly. ⁠
        3. Mix in frozen corn, salt, pepper, and 1 teaspoon paprika. ⁠
        4. Increase heat to a boil. Once boiling, reduce heat to medium-low and simmer until thickened (about 5 minutes). ⁠
        5. Turn off heat and mix in ¼ cup pecorino.⁠
        6. Top with the last ¼ cup of cheese and sprinkle on the rest of the smoked paprika. Broil for 3-4 minutes or until the top is golden brown.⁠
