  • 1 cup Arrowhead Mills Organic Pearled Barley cooked
  • 1 cup leeks
  • 1 ½ cups shiitake mushrooms
  • 2 cups kale shredded
  • 6 cups vegetable stock
  • 2 tablespoons miso
  • 3 cloves garlic minced
  • 2 inches ginger root grated
  • 1 tablespoon sesame oil


  • In a large saucepan, heat oil on medium heat.
  • Sauté leeks, garlic, and ginger root and cook until the leeks are soft.⁠
  • Add mushrooms, stock, and miso paste. Bring to a boil and cover for 15 minutes.⁠
  • Reduce heat and stir in kale and cooked barley, and simmer for 5-10 minutes or until kale is cooked.⁠
