Curry Red Lentil Soup

Ingredients

  • 2 cups Arrowhead Mills Organic Red Lentils rinsed
  • 1 medium yellow onion chopped
  • 4 large cloves garlic minced
  • 3 tablespoons olive oil
  • 1 can full fat coconut milk
  • 5 cups vegetable broth
  • 4 large carrots diced
  • 2 tablespoons tomato paste
  • 1 teaspoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • ½ teaspoon ginger
  • 1 teaspoon paprika
  • salt and pepper to taste

Instructions

  • In a large pan with the olive oil add in onion, carrots, garlic, and seasoning.
  • Sauté for an additional 6-8 minutes until the onion is translucent.
  • Add in the red lentils, tomato paste, coconut milk and vegetable broth.
  • Bring to a boil, reduce the heat to low, covered, for about 25 minutes or until the lentils are cooked through and most of the liquid is absorbed.
  • Transfer to a blender (or use an immersion blender in the pan) and process until completely smooth.
  • Transfer back to the pot. Taste to add in salt and pepper. Simmer on low for 5 mins before serving.
