Buckwheat Muffins

Ingredients

  • 1 ½ cups Arrowhead Mills Organic Buckwheat Flour
  • cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp  salt
  • 2 large eggs
  • ½ cup maple syrup
  • cup unsweetened applesauce
  • ¼ cup melted unsalted butter
  • 1 tsp vanilla extract
  • ½ cup milk
  • ½ cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 350°F.
  • In a large mixing bowl, sift together buckwheat flour, cocoa powder, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the eggs, maple syrup, applesauce, melted butter, and vanilla extract until smooth.
  • Add the wet ingredients to the dry ingredients, mixing until just combined.
  • Stir in the milk gradually until the batter is smooth.
  • Fold in the chocolate chips. Pour into a lined muffin pan.
  • Bake for 18-22 minutes.
  • Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
