Barley Miso Soup

      • Ingredients:
        • 1 cup Arrowhead Mills Barley (cooked)⁠
        • 1 cup Leeks⁠
        • 1 ½ cups Shiitake Mushrooms⁠
        • 2 cups Shredded Kale⁠
        • 6 cups Vegetable Stock⁠
        • 2 tablespoons Miso⁠
        • 3 cloves Garlic (minced)⁠
        • 2 inches Ginger Root (grated)⁠
        • 1 tablespoon Sesame Oil⁠
      • Directions:
        1. In a large saucepan, heat oil on medium heat.⁠
        2. Sauté leek, garlic and ginger root and cook until leak is soft.⁠
        3. Add mushrooms, stock and miso paste. Bring to a boil and cover for 15 minutes.⁠
        4. Reduce heat and stir in kale + cooked barley and simmer for 5-10 minutes or until kale is cooked.⁠
        5. Enjoy!⁠
