Barley Miso Soup

- Ingredients:
- 1 cup Arrowhead Mills Barley (cooked)
- 1 cup Leeks
- 1 ½ cups Shiitake Mushrooms
- 2 cups Shredded Kale
- 6 cups Vegetable Stock
- 2 tablespoons Miso
- 3 cloves Garlic (minced)
- 2 inches Ginger Root (grated)
- 1 tablespoon Sesame Oil

- Directions:
- In a large saucepan, heat oil on medium heat.
- Sauté leek, garlic and ginger root and cook until leak is soft.
- Add mushrooms, stock and miso paste. Bring to a boil and cover for 15 minutes.
- Reduce heat and stir in kale + cooked barley and simmer for 5-10 minutes or until kale is cooked.
