Steel Cut Oat Granola

- Ingredients:
- 4 cups Arrowhead Mills Gluten Free Steel Cut Oats
- ½ cup Ground Flaxseed
- ½ cup Cashews (roughly chopped)
- ½ cup Chia Seeds
- ¼ cup Coconut Oil
- 1 ¼ cup Grade A Maple Syrup
- 2 tablespoons Ground Cinnamon
- 1 tablespoon Ground Ginger
- 1 tablespoon Vanilla Extract
- ⅓ cup Shredded Coconut
- ⅔ cup Chocolate Chips

- Directions:
- Combine all dry ingredients except chocolate chips.
- Melt coconut oil, and combine all wet ingredients.
- Add wet ingredients to dry mix, and when combined, fold in the chocolate chips.
- Spread on two parchment-lined cookie sheets.
- Bake at 325° F for 50-75 minutes, checking it every 20 minutes and tossing it. It’ll depend on how thin you spread it and your oven temperature. (Granola is done when it’s a little golden brown. It will continue to cook a little as it cools. If you’d like bigger clumps you can fold in more chocolate chips when it comes out of the oven.)
