Steel Cut Oat Granola

Ingredients

  • 4 cups Arrowhead Mills Organic Steel Cut Oats
  • ½ cup flax seeds ground
  • ½ cup cashews roughly chopped
  • ½ cup chia seeds
  • ¼ cup coconut oil
  • 1 ¼ cup maple syrup
  • 2 tablespoons ground cinnamon
  • 1 tablespoon ground ginger
  • 1 tablespoon vanilla extract
  • cup shredded coconut
  • cup chocolate chips

Instructions

  • Combine all dry ingredients except chocolate chips.⁠
  • Melt coconut oil, and combine all wet ingredients.⁠
  • Add wet ingredients to dry mix, and when combined, fold in the chocolate chips.
  • Spread on two parchment-lined cookie sheets.
  • Bake at 325°F for 50-75 minutes, checking it every 20 minutes and tossing it. It’ll depend on how thin you spread it and your oven temperature.
  • Granola is done when it’s a little golden brown. It will continue to cook a little as it cools. If you’d like bigger clumps you can fold in more chocolate chips when it comes out of the oven.
