Lentil Dahl

- Ingredients:
- 2 cups Lentils – rinsed and drained
- 1 teaspoon Turmeric
- 2 teaspoon Garam Masala
- 1 teaspoon Cumin
- 1 teaspoon Sea Salt
- 1 tablespoon Ginger Minced
- 1 large Onion diced
- 1 tablespoon Avocado Oil or other Vegetable Oil
- 3 cloves Garlic, minced
- optional: Red Pepper Flakes
- 2 cups + 5 ounces Vegetable Stock
- 8 ounces full fat Coconut Milk
- 1 Bay Leaf
To serve
- Spinach or other greens, Chutney, Toasted Cashew

- Directions:
- In a saucepan, saute vegetable oil with onion, garlic and spices for a few minutes until onions are translucent.
- Transfer mixture to slow cooker with rinsed/drained lentils, coconut milk, vegetable stock and bay leaf
cook on low for 6 hours or until lentils have reached desired consistency.
