Lentil Dahl

      • Ingredients:
        • 2 cups Lentils – rinsed and drained
        • 1 teaspoon Turmeric
        • 2 teaspoon Garam Masala
        • 1 teaspoon Cumin
        • 1 teaspoon Sea Salt
        • 1 tablespoon Ginger Minced
        • 1 large Onion diced
        • 1 tablespoon Avocado Oil or other Vegetable Oil
        • 3 cloves Garlic, minced
        • optional: Red Pepper Flakes
        • 2 cups + 5 ounces Vegetable Stock
        • 8 ounces full fat Coconut Milk
        • 1 Bay Leaf

        To serve

        • Spinach or other greens, Chutney, Toasted Cashew
      • Directions:
        1. In a saucepan, saute vegetable oil with onion, garlic and spices for a few minutes until onions are translucent.
        2. Transfer mixture to slow cooker with rinsed/drained lentils, coconut milk, vegetable stock and bay leaf
          cook on low for 6 hours or until lentils have reached desired consistency.
