Latkes

      • Ingredients:
        • 3 medium Russet Potatoes (peeled + grated)⁠
        • 1 medium Yellow Onion (grated or thinly sliced)⁠
        • ½ cup Arrowhead Mills Oat flour
        • ½ cup Rolled Oats⁠
        • 2 tablespoons Butter (melted)(divided)⁠
        • 1 large Egg⁠
        • Salt + Pepper to taste⁠
      • Directions:
        1. Grate peeled potatoes and onions. Place onions in a dishcloth and squeeze to release all the liquid from the potatoes. Add potatoes into a bowl with onions.⁠
        2. Mix in flour, rolled oats, egg, and salt + pepper.⁠
        3. On a parchment-lined baking sheet, divide each latke into ¼ cup patties.⁠
        4. Place in a pre-heated 425° F oven for 25-30 minutes, flipping half way.⁠
        5. Serve with your favorite dipping sauces and enjoy!⁠
