Materials

  • 3 medium russet potatoes peeled and grated
  • 1 medium yellow onion grated, or thinly sliced
  • ½ cup Arrowhead Mills Organic Gluten Free Oat Flour
  • ½ cup rolled oats
  • 2 tablespoons butter melted and divided
  • 1 large egg
  • 1 pinch salt and pepper to taste

Instructions

  • Grate peeled potatoes and onions. Place onions in a dishcloth and squeeze to release all the liquid from the potatoes. Add potatoes into a bowl with onions.⁠
  • Mix in flour, rolled oats, egg, and salt + pepper.⁠
  • On a parchment-lined baking sheet, divide each latke into ¼ cup patties.⁠
  • Place in a pre-heated 425°F oven for 25-30 minutes, flipping half way.⁠
  • Serve with your favorite dipping sauces and enjoy!⁠
