Combine all dry ingredients except chocolate chips.
Melt coconut oil, and combine all wet ingredients.
Add wet ingredients to dry mix, and when combined, fold in the chocolate chips.
Spread on two parchment-lined cookie sheets.
Bake at 325°F for 50-75 minutes, checking it every 20 minutes and tossing it. It’ll depend on how thin you spread it and your oven temperature.
Granola is done when it’s a little golden brown. It will continue to cook a little as it cools. If you’d like bigger clumps you can fold in more chocolate chips when it comes out of the oven.
