In a large bowl, combine all your wet ingredients until well incorporated.
In another bowl, combine all your dry ingredients.
Add dry ingredients to your wet until just combined.
Pour into a greased, parchment lined loaf pan.
Bake in a 350°F oven for 60-70 minutes or until a pick comes out clean.
Allow to cool for 10 minutes before removing from pan,
Top with your favorite glaze and pumpkin seeds.
