Spelt Apple Bundt Cake

      • Yield:
      • 10 - 12 slices
      • Ingredients:
        • 125 grams / ½ cup Yogurt⁠
        • 225 grams / 1 cup Arrowhead Mills Spelt flour⁠
        • 150 grams / ¾ cup Coconut Sugar (or sugar of choice) + more for mould⁠
        • 75 grams / ¼ cup Olive Oil⁠
        • 3 large Eggs⁠
        • 8 grams /1 ½ teaspoon Baking Powder⁠
        • 1 tablespoon Ground Cinnamon⁠
        • 1 teaspoon Vanilla Extract⁠
        • ½ teaspoon Fine Kosher Salt⁠
        • 3 “low water content” Apples (diced)⁠

        For best results, ingredients should be measured

      • Directions:
        1. Preheat oven to 350°F.
        2. Butter the mould and sprinkle with sugar
        3. Mix yogurt, eggs, sugar, olive oil, and vanilla until well combined.
        4. In a separate bowl, mix Spelt flour, salt, + baking powder.
        5. Combine dry mixture to wet and stir until just combined.
        6. Fold in apples and pour the mixture into mould.
        7. Bake for 50-60 minutes.
        8. Allow to cool for 10 minutes before removing from the mold.
